Lavender Gin Fizz
(cocktail + mocktail, from the farm)
There's something about lavender simple syrup that makes a drink feel like summer at the farm — floral, but not fussy. This one's built to work two ways: pour it over gin and soda for a proper cocktail, or skip the gin entirely and it's just as good.
What you'll need
- 1 oz Tumalo Lavender simple syrup
- 2 oz gin (skip for the mocktail)
- 1 oz fresh lemon juice
- 3–4 oz club soda or sparkling water
- Ice
- Lemon wheel and a sprig of fresh lavender, for garnish
How to make it
- Fill a glass with ice.
- Add the lavender simple syrup, gin (if using), and lemon juice.
- Top with club soda and give it a gentle stir — don't overdo it, you want to keep the fizz.
- Garnish with a lemon wheel and a sprig of lavender.
For the mocktail version: leave out the gin and add an extra splash of soda water to keep the proportions balanced. It's just as refreshing, and honestly, a lot of people at the farm store ask for it this way on purpose.
A couple of notes:
- If you don't have our lavender simple syrup on hand yet, it's available in the farm store or on our website — a little goes a long way.
- This one's easy to batch for a crowd. Multiply the syrup, gin, and lemon juice by however many you're serving, keep it in a pitcher over ice, and top individual glasses with soda right before serving so it stays fizzy.
