Yields: 1 loaf
Prep time: 15 minutes
Cook time: 60 minutes
Total time: 75 minutes
Ingredients:
- 1 cup plain yogurt
- ½ cup applesauce
- ½ cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ¼ cups sugar
- 2 cups All-Purpose flour
- 1 teaspoon kosher salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 tablespoon Victoria’s Lavender Earl Grey Tea (or ½ tablespoon of Earl Grey Tea and ½ tablespoon of culinary lavender)
- 1 tablespoon granulated sugar
Kitchen Equipment:
- 2 Medium mixing bowls
- Whisk or electric mixer
- 1 8 ½ x 4 ½ loaf pan
- Parchment paper
Instructions:
-
Preheat your oven to 325°F and lightly grease the loaf pan with coconut oil or butter. Line it with parchment paper for easy removal later.
-
In a medium mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, salt, and Lavender Earl Grey tea (or Earl Grey Tea and Culinary Lavender combo). If the tea leaves are large, crush them until finely ground.
-
In another medium mixing bowl, beat the eggs and sugar until the mixture becomes pale yellow and frothy, about one minute.
-
Mix in the vanilla extract, applesauce, and yogurt into the sugar mixture.
-
Slowly add the melted coconut oil while whisking until fully combined.
-
Incorporate the dry ingredients into the wet mixture until you get a smooth, lump-free batter.
-
Pour the batter into the prepared loaf pan and sprinkle the top with granulated sugar. Tap the pan gently on the counter to remove any air bubbles.
-
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
-
Allow the loaf to cool in the pan for 20 minutes before slicing and serving.
Indulge in this delightful treat and savor the applause of your delighted guests!
