This delightful recipe is here to save the day, promising a quick and easy prep that'll leave your guests in awe of your culinary skills. This recipe was created by Kelsey Miguel - @notumamiscooking. Prep time: 15 minutes

Cook time: 60 minutes

Total time: 75 minutes

Ingredients:

  • 1 cup plain yogurt
  • ½ cup applesauce
  • ½ cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¼ cups sugar
  • 2 cups All-Purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 tablespoon Victoria’s Lavender Earl Grey Tea (or  ½ tablespoon of Earl Grey Tea and ½ tablespoon of culinary lavender)
  • 1 tablespoon granulated sugar

Kitchen Equipment:

  • 2 Medium mixing bowls
  • Whisk or electric mixer
  • 1 8 ½ x 4 ½ loaf pan
  • Parchment paper

Instructions:

  1. Preheat your oven to 325°F and lightly grease the loaf pan with coconut oil or butter. Line it with parchment paper for easy removal later.

  2. In a medium mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, salt, and Lavender Earl Grey tea (or Earl Grey Tea and Culinary Lavender combo). If the tea leaves are large, crush them until finely ground.

  3. In another medium mixing bowl, beat the eggs and sugar until the mixture becomes pale yellow and frothy, about one minute.

  4. Mix in the vanilla extract, applesauce, and yogurt into the sugar mixture.

  5. Slowly add the melted coconut oil while whisking until fully combined.

  6. Incorporate the dry ingredients into the wet mixture until you get a smooth, lump-free batter.

  7. Pour the batter into the prepared loaf pan and sprinkle the top with granulated sugar. Tap the pan gently on the counter to remove any air bubbles.

  8. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the loaf to cool in the pan for 20 minutes before slicing and serving.
